Baking with Lucy

Easy cottage loaf

I love this recipe, it is so easy and something anyone could do. I do all of this in the mixer and then leave it somewhere warm for a few hours to rise before knocking it back and then shaping to leave again for an hour before baking.

I usually make this into a round cob or classic cottage loaf shape, but today I did a plait so we could have it for soup.

500g strong white bread flour, plus extra for dusting

7g fast-action dried yeast

10g table salt

50g butter (or vegan butter)

baking paper for the oven

I mix everything together as mentioned above in my mixer, being sure to keep the salt and yeast at different sides of the bowl. Once the above is all done I bake at 180 degrees in my oven, I also put a small amount of water in a tray below my bread (not on the same tray!) to add steam to the oven which in turn gives a beautiful crust and flavour to the bread. I bake till golden brown (40 min ish depending on your oven).
